This worked quite well.
Ingredients
- 500ml milk
- 60g butter, cubed
- 2 eggs, beaten
- 100g caster sugar
- 1 teaspoon vanilla extract
- 1 teaspoon brandy (optional)
- 1 teaspoon lemon or orange zest (optional)
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon grated nutmeg
- 6 slices brioche, cubed
- 75g raisins
Method
Warm the milk, take a couple of tablespoons and whisk in to the eggs. Melt the butter into the milk and beat in the egg mixture, together with the sugar, vanilla, brandy, zest and spices.
Put the cubed brioche into an oven-proof dish and pour over the milk mixture.
Bake at 200 degrees celsius for 40 minutes.
